When Elpidio left his home in Oaxaca, Mexico in 2001 to come work in the United States, he carried with him little more than determination, faith, and a dream. He began working in restaurants, construction, and bakeries—always putting in long hours and learning along the way. Over time, his dedication and hard work paid off.
Today, Elpidio is the proud owner of Pueblito Tacos, a growing business with three food truck locations in Timberville, New Market, and Woodstock, Virginia. Known for its authentic Mexican cuisine—especially tacos that capture the true flavors of Mexico—Pueblito Tacos has become a local favorite. Customers rave not only about the incredible taste but also about the unbeatable prices that make great food accessible to everyone.
But Elpidio’s vision didn’t stop with tacos. In Timberville, alongside his food truck, he opened a bakery where he continues to honor his roots in traditional baking. His bakery provides the community with fresh breads and pastries, adding yet another reason people keep coming back.
